Cooking tips:When scalding broccoli and other green dishes, you should not only put oil, salt, but also some sugar. In this way, the scalded dishes can keep the green color. Different brands of abalone juice have different saltiness, which can be adjusted according to their own taste. For example, the Haitian one I used has a sweet taste. If I don't like the sweet taste, I can reduce the amount of abalone juice. It's OK to mix it with some raw soy sauce. Don't put too much of the old smoke. It's mainly for coloring.
