I didn't like eggplant very much when I was a child. I didn't eat any. When I was in high school, my teacher once dragged the class at noon. After class, the canteen only had eggplant to burn. Step12:Pat a few cloves of garlic. Cut into pieces.
Step13:Cut the green peppers.
Step14:When the pot is not hot, pour in the right amount of oil. When the oil is 50% hot, add Pixian chili sauce. Stir fry the red oil at low temperature. The oil temperature must not be high or Pixian spicy sauce will be fried and pasted.
Step15:When Pixian spicy sauce is stir fried with red oil, put ginger and onion in the pan. When the flavor is stir fried, put eggplant in the pan.
Step16:Stir fry for three to four minutes, then add green pepper.
Step17:Put in the green pepper, then pour in the fish sauce seasoning and stir fry for a while.
Step18:Put in the garlic before you leave the pot.
Cooking tips:When you fry Pixian chili sauce, you must use a small fire. Otherwise, it's easy to fry and paste the pepper. Green peppers are rich in vitamin C. It's recommended to put it in when they are out of the pot. This should be able to preserve nutrition. When processing eggplant, salt has already been put in. Pixian spicy sauce itself is salty. When cooking again, do not add salt. There are skills in making delicious dishes.
