Step1:Cut streaky pork into 7mm thick slices. Mix with wine, soy sauce, salt, chicken essence and starch. Marinate for 20 minutes.
Step2:Heat the oil in a hot pot. Fry the marinated streaky pork until it changes color. Drain the oil. Repeat (i.e. fry twice). Drain the oil in a dish for later use.
Step3:In another pot, heat the cold oil. Stir in ginger and scallion. Add tomato sauce, sugar and vinegar to make a thick sauce. Stir fry the fried pork slices.
Step4:When the sauce wraps the streaky pork, the sauce is basically collected and the dish is completed.
Cooking tips:The specific amount of ketchup, sugar and vinegar depends on your taste. It's almost the same proportion. There are skills in making delicious dishes.
