Step1:Slice ginger. Cut onion into small pieces. Set aside.
Step2:Cut off the shrimps' whiskers and feet; remove the shrimps' thread; wash and drain the water.
Step3:Add a proper amount of oil to the pan (subject to the immersion of shrimp). When the oil is warm, fry the cleaned shrimp until the shrimp meat is slightly separated from the shrimp shell. Drain the oil for use.
Step4:Leave a little oil in the pot. Stir fry ginger slices and half chopped green onion. Fry shrimp. Add sugar, cooking wine, soy sauce and chicken essence to taste.
Step5:Stir fry over high heat until the sauce is almost done. Sprinkle with scallion.
Cooking tips:When I seasoned, I added the raw sauce and thought it was almost salty. I didn't add salt. Taste varies from person to person. If you don't think it's salty enough, you can add salt to taste it. There are skills in making delicious dishes.
