Almost every family has to eat carp for the new year, at least here we are.
Step1:After the carp is washed, draw an X on the body of the fish for better taste. Then sprinkle salt, cooking wine and ginger slices to marinate for 10 minutes. Ginger slices can better remove the fishy smell.
Step2:Slice the green onion, shred the ginger, pat the garlic. Cut the dried peppers into circles for use
Step3:Pour in a little more oil than usual, then put in the marinated fish, fry until both sides are golden
Step4:Add the prepared ginger, garlic, star anise, dried pepper and a small amount of scallion to fry the flavor. Pour in the fried fish.
Step5:Put in a little soy sauce and add water to submerge the fish maw. Bring to a boil over medium heat. During this period, water the fish with soup constantly so that the fish can be cooked evenly
Step6:When the fish is cooked, heat the fire to collect the juice. Put in the rest of the scallion and you can start the pot.
Cooking tips:It's better to marinate the carp in advance. I don't need to add salt when I cook the fish afterwards. I have skills in making delicious dishes.
