Step1:Clean pig's hooves and chop them into small pieces. Peel and cut lotus root.
Step2:Boil a pot of boiling water. Add a few pieces of ginger and cooking wine. Put pig's hooves into the boiling water. Then remove the water and drain it after cleaning.
Step3:Heat up the oil. Stir fry the scallion and ginger. Fry the pig's hoof until both sides are yellowish.
Step4:Mix in salt, soy sauce, sweet sauce, sugar, bean curd and stir fry until the pig's hooves are evenly colored. Cook a little cooking wine and stir fry. Add in water. Do not pass the pig's hoof. Boil over high heat. Turn to low heat. Cover and simmer for about 1 hour.
Step5:Finally, cut the lotus root. Open the cover and collect the juice.
