Step1:Peel off the shell of bamboo shoots. Wash and cut into sections. (the old root is cut off and preserved separately. It is said that it can be freshened when stewing.
Step2:Put the bamboo shoots in boiling water with oil and salt. Blanch for 15 seconds, remove and control.
Step3:Hot oil pot. Stir fry onion, ginger and garlic, then take them out. Put them in bamboo shoots and stir fry them for a few times.
Step4:Pour in the rice wine. Cover and smoke for a while. Open the lid. Stir in sugar, soy sauce and salt. Stir well.
Step5:Add clear water or high soup to the fresh shoots. Cover. Bring to a boil and simmer for 10 minutes. Open the lid. Heat to collect the juice.
