Step1:Wash and chop mutton into fine grains; wash and chop leek into fine grains; soak pepper in boiling water to make pepper water. Mix the minced mutton with ginger, onion, salt, pepper, cooking wine, soy sauce, pepper water and egg liquid, then add sesame oil and peanut oil, finally add leek and mix.
Step2:Put the dumpling stuffing in the middle of the skin. If you are not skilled, don't put too much stuffing. First, pinch the center, then the two sides. Then squeeze the edge of the dumpling skin from the middle to the two sides. In this way, the dumpling won't leak soup when boiling. Then find a big plate. Northerners usually use a curtain (made of bamboo). It's neatly stacked on it. Note - when each dumpling is made, dip some noodles on the bottom of the dumpling to prevent it from sticking to the plate.
Step3:Boil a pot of boiling water. When the water boils, put the dumplings in it and stir it in time (clockwise) to prevent the dumplings from sticking together in the water. I remember my mother used to pour cold water three times before. The dumplings were cooked. Now she improved. She didn't pour cold water. She just changed the fire to a small one. She covered it and boiled it until the dumplings were fat and floating on the water.
Step4:Open it. It's best to eat hot dumplings. Add some old vinegar and spicy oil. But I usually don't add anything at the beginning. It's delicious.
Step5:What's more, the dumplings should be put on the plate. Later, they should be turned over so as not to stick in the plate. If the dumplings break, they will not be delicious.
