It's better to roll the dough on the oilcloth, so that it can be transferred to the baking tray after rolling. Roll out the dough, cover with tarpaulin, and make two rounds. Now the room temperature (25 ℃) is about 40 minutes. It can't be too long. It can't be too high.
Step6:After fermentation, the dough surface is pricked with a fork to prevent the gas from expanding during the baking process, which causes some dough to bulge (that's what I said. I made it three times in total. The first time there were too many dough, the second time I didn't blink, and the third time I learned to be good). Then apply the egg liquid. The whole egg is OK. You can use the yolk liquid if you want the color to be very deep. But it's a waste of chicken protein. Pay attention not to smear the egg liquid on the pierced eyes. It's blocked. It's white pierced eyes then sprinkle black sesame seeds. Black sesame doesn't need to be roasted in advance.
Step7:Preheat the oven at 180 ℃. Bake for about 15 minutes. Be sure to watch it by the side of the oven. Don't think about running to watch TV in the oven. Sleep or something. The dough is very thin.
