No one can make scrambled eggs with tomatoes. But in my circle, no one is better than me. This is one of my best dishes.
Step1:Wash and dice tomato. Stir egg mixture evenly. Cut garlic into small pieces. Cut onion into small pieces (0.5-1 cm). Set aside.
Step2:In a hot oil pan, fry the egg mixture over medium heat until the edge of the omelette is curled. Turn it over with a spatula to see if it's cooked. When it's done, turn the omelette over and fry it for 1 to 2 minutes (it's not necessary to keep it round. We don't want to make omelette). Then put it in the pan for standby.
Step3:Reheat the oil pan. Stir in the garlic and stir fry the diced tomatoes. Add some salt and stir well. Add white sugar (depending on the maturity of the tomatoes. Crisp polysaccharide) and stir well. Pour in the fried eggs. Use the spatula to stir fry the pancakes in small pieces. Press the tomatoes with the spatula while frying until most of the tomatoes are soft and close to the tomato puree. If there is no tomato juice, add some cold water.
Step4:Add chicken essence in medium heat (add chicken essence if you have less eggs) and stir well. Turn off the heat. Sprinkle in onion and mix well.
Cooking tips:Choose the soft tomato. No onion. The fried tomato must have sweet taste. So I found that I must add sugar to the unripe tomato. There are skills in making delicious dishes.
