Step1:Add sugar and salad oil to egg yolk and stir until it is emulsified. Then add milk at room temperature and stir well. Sift in powder and salt and mix well. Finally add rum and stir well to make egg yolk paste.
Step2:Beat the egg white with lemon juice until it's thick. Mix it with sugar three times at high speed. Beat slowly for the last few minutes until it's wet and dry. Lift the beater head to have a long hook.
Step3:Use a scraper to mix one-third of the protein into the yolk paste. Then take one-third of the protein into the yolk paste. Finally, pour the yolk paste into the remaining one-third of the protein basin to mix. Use the scraper to mix the whole process.
Step4:Pour the batter into the baking tray lined with oil paper and smooth it. Be afraid of big bubbles at the bottom of the baking tray.
Step5:Preheat the oven. Bake at 150 ℃ for about 18 minutes. Take out the back button. Uncover the oil paper at the bottom. Then cover it with a layer of clean oil paper and turn it upside down. When it's cool, spread jam on it.
