Cooking Steps

  1. Step1:Cut 4 pieces of ginger and 2 pieces of green onion. Half of them are used to marinate hairtail. Half of them are used to cook in hot pot.

  2. Step2:Cut the hairtail. Remove the internal organs and wash it. Remove the black film inside the abdomen. It's the most fishy place. Cut the shredded onion and ginger and put them into the hairtail. Then pour in a tablespoon of cooking wine and marinate for 30 minutes.

  3. Step3:The pickled section of hairtail should control the water content and be evenly coated with starch. Don't wrap too thick. Shake off the excess starch.

  4. Step4:Pour some oil into the pan. Heat to 70% heat. Fry the fish over medium low heat until both sides are golden yellow. Pinch out the oil.

  5. Step5:In another pot, pour in a little oil. Heat up and stir fry the remaining shredded green onion and ginger and star anise.

  6. Step6:Then pour in a bowl of water.

  7. Step7:When the water boils, pour in cooking wine, vinegar and raw soy sauce.

  8. Step8:Add sugar and a little salt and mix well.

  9. Step9:Pour the fried hairtail into the pot. Sprinkle a little white pepper. Stir slightly. The fish will be scattered if the action is too big.

  10. Step10:Collect the juice over medium and small heat. Taste the salt before leaving the pot. Add a little salt if it's light.

  11. Step11:The finished product is as shown in the figure. You can sprinkle a little green onion to decorate it after packing.
