This dish is my favorite among the salted vegetables in my hometown (and garlic eggplant and spicy cabbage. Ha ha). I haven't eaten it in Beijing. But I always remember it. Step3:Cook until the skin of potato is wrinkled and the stem of sweet potato is rotten. Cooking tips:Potatoes are not peeled. The smaller the potatoes, the better. Don't use big potatoes. Don't cut them. When stewing, because the soup is salty, the potatoes will wrinkle. This pickled potato must wrinkle. Soak the stem of dried sweet potato in advance. It's OK to soak for one or two hours. If the soaking time is short, stew it for a while. If the soaking time is long, stew it for a while. The stem of dried sweet potato is the dried sweet potato seedling without leaves. It's not easy to buy. There are skills in making delicious dishes.
