This original Cupcake does not crack or shrink. The method is slightly different from the traditional one. Heat the oil to about 80 degrees and sift the flour. See the recipe for details.
Step1:Prepare the ingredients. It should be noted that the prepared container must be free of water and oil. 4 eggs at normal temperature. One of the whole eggs is beaten in a bowl. The other three yolk egg whites are separated. Look at the picture.
Step2:Heat the oil and hot water to about 80 degrees. Take it out.
Step3:Quickly sift in flour and starch. Mix well.
Step4:When the oil is warm, it's about 35 degrees. Add a whole egg liquid and three yolks.
Step5:Mix well.
Step6:Pour in the milk and let it live.
Step7:The paste state after adjustment is shown in the figure.
Step8:Beat the egg white in the middle. Add the first sugar when big bubbles appear.
Step9:Add sugar for the second time when the bubbles are fine. Adjust the eggbeater to a low level to finish the small bubbles. Add sugar for the third time.
Step10:Beat until the egg white is delicate and white. When lifting the beating head, a small hook appears, as shown in the figure.
Step11:Take 1 / 3 of the egg white and put it in the egg yolk paste basin at 1 o'clock and turn it to 7 o'clock. Do not circle it to avoid defoaming.
Step12:For the second time, take the remaining half of the protein and continue to mix it with 8 characters. You can also cut it in half from the top to the bottom.
Step13:Pour the yolk paste into the remaining protein. Mix the yolk paste in the same way. Do not circle.
Step14:Put the egg yolk paste into the dispenser or mounting bag. Preheat the oven at 130 ℃ for 40 minutes.
Step15:I use the 12 cup mold of the chef. Put on the paper holder. It can make 12 cupcakes.
Step16:The yolk paste is divided into 12 moulds. Each mould is eight full. Lightly vibrate the mould plate three times to vibrate out bubbles.
Step17:Oven 130 degrees 40 minutes. Turn back 150 degrees 10 minutes.
Step18:Take it out and cool it after baking. Do not buckle it upside down.

Cooking tips:A few words. There is no oil or water in the container. When the pasted protein is mixed with the batter, make a figure of eight and fold it. Do not circle it to avoid defoaming. There are skills in making delicious dishes.
