For the first time, I have referred to the plan of three people. Although the fish is boiled, it doesn't sell well, but it tastes good. The most important thing is that it's not fishy at all.
Step1:Scale the yellow croaker.
Step2:Clean the internal organs and gills. See if there are parasites in the internal organs. If there are, they can't be eaten.
Step3:Flower cutter.
Step4:Sprinkle with scallion, ginger, pepper, pepper, salt and cooking wine. Daub the fish body and belly evenly with your hands. Put some seasoning just put into the fish belly. Marinate for half an hour.
Step5:After marinating, dry the fish with kitchen paper. Coat the whole fish with starch.
Step6:Put it in the pot and fry it until both sides are golden. Pour in half a bowl of rice vinegar and cover with the lid and cook for 30 seconds. This process can remove the smell well. Then fish out.
Step7:Heat up the oil after washing the pot. Put in the pepper and the seasoning and stir fry. Do not fish out. Put in the onion and ginger and stir fry.
Step8:Add proper amount of water. When the water is boiled, add raw soy sauce, old soy sauce and proper amount of salt. 1.5 bottle cap cooking wine and vinegar to boil.
Step9:Put in the yellow croaker and simmer for 20 minutes. Turn over the fish in the middle.
Step10:Take the juice out of the fire. Take out the fish.
Step11:Pour some starch water into the remaining juice in the pot. Stir well and pour over the fish. A non fishy braised yellow croaker is ready.
