It's a good time for spring and Jingming. If you want to move this short and pleasant spring to the table, you can have a fried egg with Chinese toon sprouts. -
Step1:Put the flour in the basin. Half of the flour is mixed with boiling water to make dough. The rest is mixed with cold water to make a soft dough. Wake up for 30 minutes.
Step2:Put some oil on the panel. Smooth the dough and make it into a long strip.
Step3:Cut into 23 times the size of dumpling dough. Press flat.
Step4:Brush the contact surface of the two small pastries with oil. Brush all around. It's easy to open when it's burned out.
Step5:The oil brushing sides of the two dough cakes are folded relative to each other. Press them together. Pinch around. Pinch a little. Put it on the panel and wake up for 5 minutes to relax.
Step6:Roll the two pressed small cakes into big ones. Roll them on the front. Turn them over and roll them again. Avoid uneven size on both sides. There should be oil on the panel, or it will stick.
Step7:Heat the pan, turn to medium heat, and put it directly into the pancake without oil. When the pancake bubbles up, turn over.
Step8:On the other side, when big bubbles are blown up, the cake will be baked. Because a part of boiling water was used to scald the noodles. The pancake was also very thin, so it cooked very quickly.
Step9:A little cooler can separate the two cakes.
Step10:Take the table. Open it.

Step13:Pancakes roll everything. Eat.
Cooking tips:1. Use half boiling water, half cold water and noodles for dough. Spring cake is soft with a bit of toughness. Better to eat. 2. Put the baked spring cake into a clean basket / plate / pot while it is hot. Cover it. In this way, use its own hot vapor to keep it soft and won't dry out.
