In spring, the wild bamboo shoots on the mountain are the natural food given to us by nature. The crude fiber is nutritious and delicious.
Step1:Let go of the fresh bamboo shoots, blanch them in water, then cool them for use.
Step2:1. Tear the bamboo shoots in two or three parts by hand, and then cut into inch sections for standby. 2. Prepare leek, dried pepper, garlic and ginger for use. 3. Cut the bacon into thin strips for standby (the bacon needs to be cooked in advance).
Step3:Heat up the pot and put a little oil in it. Stir fry the bacon and put it in the pan. Stir in the dried pepper, garlic and ginger for several times. Then put in the bamboo shoots and continue to stir.
Step4:The bamboo shoots are almost cooked after blanching. So stir fry them for a few times, then put in leek and stir fry them. Finally put pepper powder and salt and stir fry them for a few times to get out of the pot.
Cooking tips:If you buy bamboo shoots and don't eat them immediately, they need to be bleached in water. If they are exposed, they will change color and be easy to be damaged. If it needs to be kept for two days, blanch it and float it in the water. Then change the water every day. There are skills in making delicious dishes.
