Step1:Clear noodles are wheat starch.
Step2:Mix 50g of dried noodles and 20g of corn starch. Add boiling water and stir well without dry noodles. Cover and simmer for 35 minutes. The dough is better if it's soft and hard. If it's too hard, it's easy to rot. it can't cover the stuffing.
Step3:Add 10 grams of lard and knead into dough. Cover and place for about 1 hour.
Step4:Cut the shrimps into pieces. Don't chop them too much. Just cut them into small grains. It will have the taste of shrimp teeth. After the shrimp is chopped, add a little salt and starch water and stir well.
Step5:Mince 100g pork leg. It's better to mince some pork leg. Add 1 tablespoon salt, 1 tablespoon sesame oil, 1 tablespoon soy sauce, 2 tablespoons starch water (starch water is to add water and stir evenly), and a little ginger powder to stir evenly. Chop the shallots and put them into the pork stuffing. Add in the shrimp and stir well.
Step6:Take a part of the dough and knead it again for 35 minutes, then rub it into long strips. Cut it into about 15 grams of each dough.
Step7:Sprinkle proper amount of dry flour on the panel to prevent sticking. Roll out the flour skin slightly thinner than the dumpling skin.
Step8:Put in some shrimp stuffing. Knead the shrimp dumplings in turn. Just knead it as you like.
Step9:Cover the bottom of the steamer with anti stick steamer paper. Put in shrimp dumplings. Steam for 10 minutes.
