Step1:Kill and wash crucian carp and marinate with salt, cooking wine and ginger (about 20 minutes) for standby. Shred ginger, chop garlic, cut scallion and set aside.
Step2:Pour salad oil into the frying pan to 80% oil temperature. Beat the crucian carp with raw meal (starch) or hang the paste (to prevent the fish skin from sticking to the pan) and fry it crisply. When one side is brown, turn the fish over to the other side and fry until it is brown. Then add cooking wine, ginger, garlic, salt, soy sauce, brown sugar (sugar) and bring to a boil over a large heat. Turn to a small heat and simmer for about 10 minutes. Add chicken essence and put it on the pan and sprinkle with chopped green onion.
