This is my first time uploading recipes. I used to be lazy. In fact, this eggplant rice is very simple, but it is delicious. As a staple, you can cook two dishes less. You may as well try.
Step1:The eggplant can be washed, peeled or not. I didn't cut.
Step2:Cut the eggplant into strips. Don't be too thin. Put a little salt. Don't be too much. Kill for a while.
Step3:Cut the pork into thin strips. Marinate it in cooking wine for a while to remove the fishiness. About 10 minutes.
Step4:Pour oil into the hot pot. After the oil is hot, put a little ginger into the choking pot.
Step5:Pour the shredded meat into the pot. Stir quickly over high heat.
Step6:Change the color to a small fire. Add a little sugar. Smoke raw. Continue to stir fry.
Step7:When the color changes completely, you don't need to collect the juice. Put the shredded meat and the juice together for use.
Step8:Pour in a little oil. High heat. Pour in eggplant. Stir quickly until golden.
Step9:Pour in the shredded meat. Stir over medium heat. Pour in a small amount of raw soy sauce.
Step10:When the meat and eggplant are discolored and juicy, turn off the fire when they are soft.
Step11:Taomi. Put it into the electric rice cooker you usually use at home. The water consumption is the same as usual.
Step12:Pour the super eggplant shredded pork into the raw rice in the rice pot. Smooth it. Then follow the steps of the electric cooker to make rice.
Step13:When the rice is cooked, it can be stewed in the pot for a while. It tastes better. Stir in a drop or two of sesame oil. The delicious eggplant rice is out of the pot.
Cooking tips:I use long eggplant. It doesn't matter. Round eggplant is OK. A round eggplant is equal to two long ones. It depends on the population. The amount of rice is usually made by eating rice. There are skills in making delicious dishes.
