It's a common pasta in the north. I live in the south. I suddenly want to eat it. It's too time-consuming at home. It's not suitable for work party. So I made a simple version. My material is the quantity of eight big boxes. It can be increased or decreased according to the number of people#^_^#
Step1:Add 300 grams of flour to make Microsoft dough. Cover the basin with plastic wrap. Wake up for 10 minutes. We will deal with the filling of eggs and leeks at this time.
Step2:Beat the eggs into a bowl and stir well. Heat the oil in the pan for eight minutes. Pour in the eggs and stir clockwise.
Step3:Stir fry the eggs until they are fluffy. Remove.
Step4:Wash the leeks and cut them into 5mm pieces.
Step5:Chop up the eggs, as shown in the picture.
Step6:Put the eggs, leeks, sugar, salt and pepper in the basin. Don't stir them first. Don't put salt either. Wait until the noodles wake up before putting them out, so as to avoid water.
Step7:Pull the dough into a dough the size of the bottom right corner of the figure. Use a rolling pin [there is no rolling pin at home. I use a plastic wrap as a rolling pin] to roll it into a dough the size of the top right corner of the figure.
Step8:Put half a spoon of salt in the filling. Mix well.
Step9:Put the filling in the middle of the pie.
Step10:Fold it in half and pinch it in the middle. Then pinch it a little bit on both sides. [add more dishes. When the dough is thin, you can hold it. And prevent the side of the box from being too thick and not delicious
Step11:Put two spoonfuls of oil in the pan. Turn down the heat. Put the box in the pan. Fry it until golden. Then turn it over. Fry the second side for 34 minutes.
Step12:When you get out of the pot, take two pictures first. Others are still working.
Cooking tips:Don't put too much salt. Half a spoon is OK. It's OK to light it. It just highlights the flavor of eggs and leeks. It's not delicious if it's salty. There are skills in making delicious dishes.
