Step1:Remove scales, gills and internal organs of mandarin fish and wash them. Rub them evenly with salt and cooking wine. Marinate raw ginger and scallion for more than 20 minutes.
Step2:While marinating the fish, cut ginger, pickled ginger, pickled peppers, garlic and tempeh into fine grains for standby.
Step3:Boil the water. Drop a few drops of steamed fish and soy sauce into the marinated fish. Steam over high heat for ten minutes. While steaming the fish, add vegetable oil and pepper to the frying pan. Stir fry the chopped ginger, pickled ginger, pickled pepper and fermented soybeans. Pour them on the steamed mandarin fish. Sprinkle a little green onion.
