The way of dry baking is to stir the chives, ginger and garlic in hot oil first, and then spread the fish pieces with good taste on the top. Cover the lid and simmer slowly over a small fire. No water will be added during the process. The fish meat will be fully cooked by the steam of stewing.
Step1:Cut ginger into large pieces. Cut scallion into small pieces. Cut mandarin fish into large pieces after treatment.
Step2:Add 1 tbsp old sauce, 3 tbsp raw sauce, 1 tbsp oyster sauce, 1 tbsp white wine, 1 tbsp pepper and 1 tbsp sugar to mandarin fish. Mix and marinate for 20 minutes.
Step3:Heat the casserole with oil. Stir in the chopped green onion, ginger and garlic to taste.
Step4:Spread a layer of coriander. Put the fish in neatly. Cover it and burn it for 5 minutes. Don't put cilantro if you don't like it.
Step5:After 5 minutes, open the lid and pour rice wine along the edge of the pot. Cover again and cook for 3 minutes.
Step6:After burning, turn off the heat and simmer for 2 or 3 minutes.
Step7:The flavor of rice wine can be fully absorbed.
Step8:Sprinkle some coriander or onion at last.
