I haven't had any dessert in my blog for a while. Today's pie. Although the surface of the grid is common, but it is truly a family style approach. It's hard to see such a look in the West Point store outside. Why? Because it takes time. How easy would it be if we just put a few horizontal bars first and then a few vertical bars? Only at home can I have the patience and time to weave such a staggered grid like a basket of flowers. Today's pie uses apples and pears. Both of them are hard fruits, so they are not directly used as fillings like strawberry pie and peach pie. Instead, they are fried first. This method can be applied to other hard fruit. Therefore, we can choose our favorite fruit and bake the freshest fragrance in summer.
Step1:First make the pie. After the butter is softened, pour in low gluten flour and sugar. Knead the butter and flour by hand until they are well mixed. It's like cornmeal.
Step2:Add water to the flour.
Step3:Knead into dough. Don't rub too long. Just make a little smooth dough. Refrigerate the dough for more than 15 minutes. Refrigerate for 1 hour and 4 hours.
Step4:When we refrigerate the loose dough, let's make the pie. Peel and core apples and pears and weigh them. Then dice them.
Step5:Heat the pot and put in the butter. Melt the butter. The fire should not be too big. Otherwise, the butter will be burnt.
Step6:Stir fry the diced fruit.
Step7:Stir fry slightly, then pour in sugar. Continue to stir fry.
Step8:After adding the sugar, the fruit will gradually exude a lot of water. With this water, cook the fruit slowly over a low heat until the diced apples are soft.
Step9:When the diced apples are soft, mix the cornstarch and water and pour them into the pot. Stir fry until the stuffing thickens.
Step10:Turn off the heat. Pour in lemon juice, salt, cinnamon powder and other seasonings and mix well. The pie is ready. Cool the prepared pie before using.
Step11:Spread thin powder on the board. Divide the flabby pie into two parts. The weight ratio of the two parts is 2-1. Put the large piece of pie on the chopping board. Use a rolling pin to roll it into thin pieces.
Step12:Spread the rolled paipi on the paipi. Press the paipi gently with your hand to make the paipi cling to the paipi.
Step13:Roll over the pie plate with a rolling pin. Cut off the extra pie skin.
Step14:Remove the extra pie by hand.
Step15:Use a fork to make small holes in the even fork on the bottom skin.
Step16:Roll out the smaller part of the pie skin reserved in step 11 into thin slices. Use it to cut into small strips.
Step17:Fill the pie plate with pie.
Step18:Use the sliver cut in step 16 to make a cross grid on the surface of the pie plate (this step will take a little time).
Step19:Press the junction between the grid and the pie plate with your fingers, so that the extra pie skin after weaving the grid will fall off, and the grid will be bonded with the pie skin at the bottom.
Step20:Brush a layer of whole egg liquid on the surface of the grid. Put the pie plate into the preheated oven. Bake at 200 ℃ for 15 minutes, then reduce the temperature to 175 ℃ for 2025 minutes. Bake to the tabl
Cooking tips:1. Double fruit, i.e. apple and pear. If you change all the pears in the formula into apples, you can make apple pie. Other hard fruits can also be made into fruit pies in this way, such as pineapple pies. 2. Apples and pears should be hard. The effect of making pie is better. 3. Pie is the most delicious when it comes out. It's crispy and soft. After a long time, the pie will absorb the water from the filling and become soft. The taste is not good enough. At this time, put the pie in the oven and reheat for a few minutes. It can restore the crisp taste of the pie skin. There are skills in making delicious dishes.
