Step1:Wash and steam the sweet potato. About 15 minutes. Then remove the skin and twist it into mud. If it's too dry, add some milk and mix well. Set aside.
Step2:Wash the balsam pear. Cut off both sides. Cut into two halves. Empty.
Step3:Put it in the boiling water. Add a little salt to remove the bitterness. Cook for about five minutes. Keep the color of balsam pear green (it will turn too soft if cooked too long). Then put it into cold water and soak it to cool.
Step4:Take the bitter gourd out and drain it. Squeeze the water with your hands as much as possible (this can reduce the bitterness). Then fill the hollow of the bitter gourd with purple sweet potato mud. Cut it into even small rolls.
