When I was a child, I loved this eggplant made by my father. Making rice with soup was the most enjoyable time for my taste buds. I occasionally want to learn this dish for my favorite people. I made this dish with my memory. Unfortunately, I can't find the taste of childhood any more. It's like a childhood I can't find again.
Step1:First, marinate the meat with a small amount of soy sauce, black pepper and cooking wine.
Step2:Cut the eggplant into hob pieces. Sprinkle salt and marinate the eggplant. Then, knead the water dry and put it on the plate for standby.
Step3:Cut the above materials for standby. They are ginger, shallot, dried pepper and garlic foam.
Step4:Here comes the secret weapon. A spoonful of Pixian bean paste.
Step5:I forgot to take pictures of fried meat. Stir fry the meat in hot oil and cold oil. Add a spoonful of cooking wine to get out of the pot first. Then add some salad oil to the hot pot. Stir the ginger, dried pepper, garlic and Pixian bean paste to make the fragrance. Add the eggplant with the water squeezed and stir for a while, add some soy sauce (my straw mushroom and soy sauce) and a spoonful of sugar. When the eggplant is soft, pour in the mince. Then add shallot, pepper and chicken essence.
