Recently, I saw a lot of posts about Qifeng's failure in making electric rice cooker. I've been making cakes with electric pressure cooker. Today, I made eight inch recipes and uploaded them. The low flour in the house is used up. It uses ordinary flour and corn starch. If the cake in the electric pressure cooker is made well, the taste will not be worse than that in the oven. My pot is made of stainless steel. It's a little bigger than the eight inch round mold. So the cake will be shorter than the round mold, but it won't shrink back. I've tried three recipes. They're all good.
Step1:Separate the egg white from the egg yolk. Sift the flour twice. Mix egg yolk, milk, salad oil and sugar evenly. Pour the flour into the yolk paste in three times. Stir in Z-shape and let stand.
Step2:Preheat the pressure cooker for one to two minutes. Brush oil on the inner tank.
Step3:Drop two drops of white vinegar into the egg white. Put sugar in three times. Beat until stiff foaming.
Step4:The egg white is mixed with the yolk paste three times. Use the method of cutting and mixing (use a scraper to cut it from the middle, turn it up from the bottom, and mix it up about ten times
Step5:Pour it into the liner. Drop it three times at the same height. If there are small bubbles on the surface, you can use a toothpick to break them.
Step6:Put the liner in the pot. Press the cake function.
Step7:When the time is up, insert it with a toothpick. It will be cooked if it doesn't touch. Take out the liner and fall three times. Shake out the hot air and buckle it on the grill. (forgot to take pictures

Cooking tips:1. Flour does not have to be low flour. It can be ordinary flour and corn starch. Sift twice to make the cake more fluffy. 2. The liner I used is made of stainless steel. I have tried it without touching the liner. The effect is not so good. 3. Don't over mix the yolk paste and flour to avoid gluten. 4. Make sure the eggs are fresh. Put them in the refrigerator before cooking. The basin for beating protein must be free of oil and water. 5. Don't take too long to mix the egg white and yolk paste to avoid defoaming. 6. Do not open the pan cover when baking the cake. There are skills in making delicious dishes.
