The production of Mapo Tofu is not as simple as you think. Most of the methods are close to mine. They are the most common and simple way. I only add mandarin fish to Pixian bean paste with mashed garlic. It's a bit too much to call Mapo Tofu. It's more realistic to call mandarin fish tofu.
Step1:Sliced mandarin fish bone and salted. Pickled with white pepper and starch. Blanch tofu and remove.
Step2:Stir fry onion, ginger and garlic in the pot to give the fragrance.
Step3:Pour in Pixian bean paste and stir fry it to produce red oil. Then pour in tofu. Add a little water.
Step4:Put the fish fillet in the pot. Cook until it is well done. Add a little salt, sugar and monosodium glutamate to taste. Sprinkle some pepper powder.
Step5:Thicken with starch, sprinkle with scallion and dish.
