Step1:Dice tofu. Soak in cold salt water for 10 minutes and remove.
Step2:Cut the dried peppers. Cut the ginger and garlic. Cut the cilantro or shallot (forget to take a picture).
Step3:Stir fry the minced meat and put it aside. Continue to stir fry the minced ginger and garlic, dried pepper, prickly ash and bean paste with the base oil. After the oil turns red, mix the minced meat. Sprinkle sugar and soy sauce and stir well.
Step4:Stir fry the minced meat and seasoning. Add some hot water to the pot. Bring to a boil and put in the cut tofu.
Step5:When there is a small amount of soup left in the pot, thicken it with starch. Sprinkle coriander or shallot out of the pot. After the plate is filled, sprinkle the pepper noodles evenly.
Cooking tips:The tofu can be more tender and smooth if it is cut well and soaked in salted water in advance. Do not use the spatula to turn the tofu after it is put into the pot. You can gently push the spatula or shake the pot to prevent the tofu from crumbling. There are skills in making delicious dishes.
