Every time I go to a restaurant for dinner, I always order a small rice cake. I like its light millet fragrance. And it's very soft and delicious. It's just yesterday that I received Xiaomi from my friend from Shandong Province. So I pulled out the grass for the Xiaomi cake. Although my own products are not as delicate as those sold in the shop, they taste very fluffy. The taste is still a match with those in the shop. O(∩_∩)O
Step1:After washing the millet, soak it for 24 hour
Step2:After soaking, drain
Step3:Prepare two stainless steel basins without oil, water and water. Separate the yolk and protein of the eggs for use
Step4:Pour millet, yolk, condensed milk and salad oil into the cooking machine
Step5:Beat it into millet paste. The finer it is, the better.
Step6:Try to play it more carefully. It's better to sift it.
Step7:Drop the lemon juice into the protein. (three drops is enough.) If you don't have lemon juice at home, you can use white vinegar instead.
Step8:First, turn the electric beater to low speed (I use the third gear). Then, when it's like a fisheye bubble, add a third of the fine sugar.
Step9:Continue to use low gear to deliver protein. When the protein becomes thicker, add 1/3 fine sugar and continue beating.
Step10:When you see that the protein becomes thicker and there are lines, add the last third of sugar and continue to beat
Step11:When lifting the electric beater and finding that the protein on the beater can pull out the curved sharp corner, it means that it has reached the wet foaming
Step12:After the wet foaming is achieved, adjust the speed of the electric egg beater from the original low speed to the highest speed. Continue to beat. Until the egg beater is lifted, the two egg beaters are upright, and the short sharp corners will not bend, indicating that the protein has reached the dry foaming, and the beating can be stopped.
Step13:Use a silica gel scraper to first fill 1 / 3 of the protein into the millet paste. Then quickly mix the millet paste with the protein. (note - do not draw circles when mixing. Also turn it up and down evenly until the protein and millet paste are completely integrated.
Step14:Then pour all the mixed millet paste into the rest of the protein. Mix in the same way
Step15:Mixed millet batter
Step16:Pour in the eight inch cake mold. Shake out the bubbles.
Step17:Cover with plastic wrap and put it into the steamer. (prevent water vapor from dripping into the rice cake. The surface of the rice cake should be flat and beautiful
Step18:Cover the pot and steam over high heat. When the water is boiled, turn to medium heat and steam for 40 minutes. Turn off the heat and steam for 5 minutes.
Step19:Steamed rice cakes
Step20:Uncovering the plastic wrap
Step21:Demoulding. Not bad.
Step22:Finished product
Step23:Finished product
Cooking tips:1. Don't open the lid during steaming. Then the rice cake will collapse and shrink. 2. This recipe can also be used to make black rice cakes. The method is exactly the same. Just change 150g millet into black rice. There are skills in making delicious dishes.
