Step1:First, prepare the main materials. A pig's hoof cut through the middle. White kidney beans (snow beans) should be soaked one day ahead of time.
Step2:If there is hair on the pig's hoof, we can burn it and scrape off the black part, or we can take the trouble of plucking it out with tweezers like me after flying...
Step3:Before flying water, soak it in cold water. Add some rice wine. I also lost some green onion leaves.
Step4:After fully soaking, change the water, add some rice wine into the water, open fire, cook slowly for 1015 minutes. In this way, the blood in the pig's hoof will fully exude. Then you can start a fire until it boils. Remove all floating debris.
Step5:After skimming off the froth, you can not change the water. You can also boil a pot of water in advance like me. Change it again. This way, the soup is cleaner. Put the green onion and ginger anise in the tea bag or directly into the soup. Put in pig's hoof and soaked white kidney bean. Enough water. Pour in a little rice wine. Boil over high heat.
Step6:Medium to high heat. Cook for at least 40 minutes. Cast iron pans don't cost much water. If you use an ordinary pot, please prepare boiled water to make up the soup when it is cooked to be even with the pig's feet.
Step7:You should be able to see the white soup color when you cook it.
Step8:Add a spoonful of salt to the pot. Let it taste a little bit. Continue to simmer for about three hours, and you will get a bowl of fragrant hoof flowers. If you think the soup is too light before you leave the pot, add some salt in the soup. Don't be too salty. You can eat it with seasoning. Sprinkle some green onion on the table.
