I've eaten eggplant with northeast sauce once. I've always wanted to make it myself. It tastes good.
Step1:The eggplant is cut into two sections. It is divided into two sides. Make a cross cut inside (don't make too deep, or it won't break easily when it is fried). Oil is more than usual. Cover the pan when frying. Avoid oil splashing. Fry it and put it in a bowl for later use.
Step2:Put out the extra oil in a clean bowl. Leave the amount of stir fried vegetables in the bowl and stir fry the onion, ginger and garlic for a while and then put the fried eggplant.
Step3:Put the soybean paste (the sauce is salty, so don't put salt) into the hot water and simmer the eggplant for about 2 minutes.
Cooking tips:I originally wanted to use June bean paste. I didn't buy it, so I replaced it with yellow sauce. Choosing long eggplant as sauce eggplant is more delicious than round eggplant. There are skills in making delicious dishes.
