I have about 1kg of brisket at home. I made two. First, stewed Brisket with radish. The brisket is made into semi-finished product first, then divided into two parts. Share it with you.
Step1:The brisket is soaked in water all night. Run out the blood water. You can remove the strong part and refine the oil. Then use the meat hammer to loosen the meat on the back of the knife. Break the tendon (there are more tendons in the brisket. It's easier to be soft and tastes better after knocking). Then cut it into small pieces with a length of 2-3cm. Remember to cut them upside down.
Step2:Cut into small pieces of beef sirloin. Add cold water and cooking wine. Boil water. Rinse the foam with hot water after drying. Drain dry.
Step3:This is the butter. I refined it. Later, I can take some fried materials. The rest can be used for other dishes. It's recommended to fry potatoes. It's very fragrant.
Step4:Break the dried chilli into small pieces. Slice the ginger (please ignore the garlic. It's used to make another tomato stewed beef brisket). Add butter to the pot. Stir fry all dried peppers, ginger slices, star anise, fragrant leaves and prickly ash. Add the dried beef brisket and stir fry it (don't put any seasonings). Add hot water. Pour in the pressure cooker. Press for 30 minutes. The brisket is more gluten. So it will take a long time for the elderly and children at home. In addition, adjust it according to the power of your own pressure cooker.
Step5:Cut white radish, onion, potato and fresh chili for standby. I saw some recipes before and suggested that you fry potatoes first. But I found that it would be too noodle in the end. So I suggest that you don't need to fry first.
Step6:When the beef brisket is pressed, take half of it out. Stir fry it with onion, potato and shredded chili. Add in the soy sauce and old soy sauce. Stir well with white sugar. Then start the pot. Add in the soup of white radish and pressed beef brisket. Do not exceed the beef brisket. Pour in the pressure cooker and press for 5 minutes.
Step7:Finished product. Good taste. First attempt successful. Ha ha.
Cooking tips:The materials before the white radish (and the last one, pepper, which was left out at the beginning) are all materials prepared for 1 kg brisket. After the white radish, it's for half of the brisket. There are skills in making delicious dishes.
