Step1:Ingredients display: 700g beef tendon meat, half onion, 1 ginger, 25g cinnamon, 3 dried peppers, 2 cloves garlic, 10g sugar, 5g salt, 2 fragrant leaves, 2 anise, 15g soybean paste, 10g old soy sauce, 30g raw soy sauce, 10g Angelica dahurica, 20 prickly ash, 15g cooking wine and 5g sugar.
Step2:First cut the onion. Slice the ginger and set aside.
Step3:Wash the beef tendon. After removing the excess fat on the surface, soak it in water for several hours. Soak it in blood. Then wash it thoroughly. Then use toothpicks to make holes in the surface.
Step4:Try to penetrate the whole meat. You can see many small holes in the surface of the meat.
Step5:Then put the beef tendon into the fresh-keeping box. Add cooking wine, salt, soybean paste, ginger slices, onion, Angelica dahurica, garlic, fragrant leaves, cinnamon, rock sugar and star anise. Massage the beef tendon. Cover it and marinate it in the refrigerator for one night.
Step6:The next day. Clean the pot. Add some oil and sugar and stir fry well. Then add cooking wine and stir fry. (when adding cooking wine, the oil in the pot is easy to spill. Turn down the fire and keep a distance.).
Step7:Then pour in the beef that has been marinated all night (soup is also poured in). Add pepper and dried pepper. After the soup is boiled, simmer for a few hours (let the meat taste completely). When the stew reaches 30 minutes, add the old soy sauce and continue to stew. It means the beef is ripe if you can pierce it with chopsticks.
Step8:After stewing, pour the sauce and beef into the container. Let it cool naturally. Then refrigerate it for another night. You can eat it the next day ~ ~ take out one piece at a time and cut it into pieces. Don't mention the taste.
Step9:I like to eat salad personally, so the next day I took out slices of beef tendon and made a salad. When cold mixing, put in beef broth, garlic puree, soy sauce, sugar, vinegar, pepper oil, chili oil, cooked sesame, onion and mix well. It's really delicious. Try it, too.
