Colleagues brought back dried eel from Hainan. Because there are old people at home. It's softer. I've seen other people do it for only 2 hours before. I've tried it before and I think it's a little shorter. I feel it's just salty for a night. No need to add salt when cooking.
Step1:Cold water soaked all night. Morning cooking.
Step2:Chop the onions and ginger.
Step3:Fry the dried eel in oil pan until both sides are golden. Because there are old people in the family. It takes less time to fry. Fry and set aside in a bowl.
Step4:Juice mixing - in a small bowl, pour in vinegar, scallion, bean powder and water and mix well.
Step5:Put a small amount of oil in the pot. Stir fry ginger until fragrant, then pour in the eel to fry. Add water and simmer over medium low heat. The amount of water shall not exceed that of fish. Add sugar. When you are ready to dry the pot, add a little old soy sauce and mix it. Pour in the mixed juice and stir fry. Out of the pot.
