This is my daughter's favorite staple food. In winter, I drink a big bowl. I'm warm all over. The formula is for four people. Please adjust it according to your own needs. -
Step1:Add water to flour and knead into smooth dough. Cover with plastic wrap and wake up for 30 minutes. When you wake up, rub it into thin strips.
Step2:Cut one by one dough that is half smaller than the normal dumpling skin.
Step3:Soak the cut dough in cold boiled water for about half an hour.
Step4:Prepare the vegetable ingredients.
Step5:Slice the zucchini and tomato. Cut the string beans into sections. Spread the eggs. Mix the meat slices with cooking wine, soy sauce and meal.
Step6:Heat up the oil. Put in the scallion and stir up the fragrance.
Step7:When the onion turns brown, take it out. Pour in the egg.
Step8:When the eggs are set, pour in the meat slices and stir fry them together.
Step9:Add in zucchini slices, tomato slices and string beans and stir fry.
Step10:Stir fry until the vegetables change color.
Step11:Add boiling water and bring to a boil. Cover and cook for three minutes.
Step12:Pull out the small flour powder one by one from the water. Gently pull the long pieces with the thumb and index finger of both hands towards both ends and put them into the soup.
Step13:Turn the medium heat to keep the noodle soup boiling. Pull the noodles one by one and put them into the pot. If it's my quantity, it's suggested to separate the two pots, otherwise, too much dough will make the soup gelatinize. Add salt and stir with a spoon when pulling half of the salt. Continue. After all the dough is pulled, turn the bottom and top of the dough over each other. Put in the sliced shredded red pepper and chicken essence. Cover and cook for one minute, then you can start the pot.
