The pork tripe with seven colors is a must-have dish in our family every year. Before the new year, the adults and children in my family will remind me - wait or like this dish best. Step1:Pork tripe about 500g. Inner wall turned out. Wash. Turn back to the original.
Step2:4 salted egg yolks and 3 preserved eggs, all cut into grains. About 1.5cm.
Step3:Pork 750g. Dice. About 0.6cm.
Step4:Cut 30 grams of ham into small pieces.
Step5:Cut 80 grams of coriander into small pieces.
Step6:Scrape 250g pig skin and clean it. Put it into a boiling pot and cook until it is 60% soft and rotten. Take it out and cut it into beans.
Step7:Put some Diced Pork and salt into the basin and stir until it is sticky. Add pork skin, ham, coriander and sesame oil. Add salted egg yolk and preserved egg.
Step8:Fill in the pork tripe with all the materials. Use toothpick to wear all the pork tripe mouth tightly. This step is very important. Make sure to sew it tightly. Otherwise, all the previous efforts will be wasted when the perforation is cooked.
Step9:In the soup pot, add more water than can be used to brew pork tripe. Boil the water in a small heat for about half an hour. Add a little salt to make white brine. Put the filled pork tripe into the white brine soup pot. Cook over medium heat for about 40 minutes. (use toothpick to prick multiple holes on the bulging pork tripe for about 10 minutes to release the air inside. This step is also very important.) Turn off the heat and cook for another 20 minutes.
Step10:Turn off the fire about 1 hour later. Add Fenjiu. Soak for about 10 minutes. Take it out. Cool it and refrigerate it for more than 4 hours. It's best to stay overnight.
Step11:Take out the stuffed pork tripe and cut it into about 0.3 pieces. Put it into a plate and then make it into a circle or a fan. It's very delicious. It's sweet, fragrant, refreshing and has endless aftertaste.
Step12:It's good to build. Color, fragrance and taste.
Step13:Put a little oil in the pot. Add garlic powder, pepper powder, chili powder, vinegar, soy sauce and sesame oil to make a sauce. Pork tripe has another flavor with sauce.
