I like braised noodles very much. But the traditional braised noodles oil is very big. So my mother specially invented this healthy vegetarian braised noodles with less oil, less salt and low calories. The taste is really better than the meat version. So our family's braised noodles always only eat this one.
Step1:Stir fry the beans and tomatoes first. Add enough water at a time. After the beans are stir fried, there will be enough soup at the bottom of the pot. Then sprinkle the scrambled eggs.
Step2:Spread the rolled noodles evenly.
Step3:Change to medium heat. Cover the pot and simmer for 15 minutes.
Step4:Lift the lid of the pot. Shake the noodles with chopsticks to avoid adhesion. Mix well and eat.
