A bowl of noodles with scallion oil and temperature -
Step1:Wash the scallion leaves and cut them into sections. If you can't control the water, use kitchen paper to clean the water on the scallion leaves. Otherwise, the oil will collapse when frying the scallion oil.
Step2:Put 100g cooking oil into the wok and heat it. Put it into the onion leaves and fry.
Step3:The green onion leaves are turning yellow.
Step4:It's a little burnt yellow.
Step5:It has turned brown.
Step6:It's almost burnt. Turn the minimum fire.
Step7:Use 10g boiling water to turn 3G sugar first, then add 15g raw soy sauce, 10g old soy sauce, 3G salt and make sauce.
Step8:Take out the scorched scallion leaves from the pot. Leave them for a few minutes to decorate the noodles. Keep the heat to a minimum.
Step9:Pour the sauce into the fried scallion oil and boil it. Pay attention to the oil bursting out. Stir it up and down with a spatula while boiling it over a small fire until it bubbles and turns off the fire. As shown in the picture (I operate with a sleeve on).
Step10:It's easy to fish out the noodles. I bought this kind of thin stick noodles. It's more delicious.
Step11:Pour two tablespoons of onion oil and mix well. It's very fragrant.
Step12:Decorate it with some scallion leaves.

Cooking tips:1. It's OK to choose shallot leaf. I don't want to buy it because it's wasted. 2. This is 300g noodles for two people. I haven't used up the scallion oil. It's cold enough. Put it in a small bowl. Cover the plastic wrap and put it in the refrigerator. It's more convenient to have the noodles mixed with scallion oil next time. 3. It's OK to buy any kind of noodles according to your preference. Make better noodles by yourself. There are skills in making delicious dishes.
