The braised pork that everyone likes to eat has different seasoning and characteristics because of different regions. Today's Hunan home style braised pork tastes spicy, soft and glutinous. Dried chili is the essential soul seasoning. Before leaving the pot, fresh chili and garlic are also used to enhance the flavor.
Step1:Wash the whole piece of fresh streaky pork. Cut into 3 cm square chunks. Cut into sections of dried chili, ginger, shallot and scallion. Cut off the peeled garlic.
Step2:Heat the oil in the pot to 60%. Stir fry the streaky pork until slightly yellow. Pour in a little cooking wine to remove the smell. Stir fry over medium heat for about 5 minutes until the oil is out. Remove the meat and strain out the extra oil.
Step3:Heat the remaining base oil. Stir fry the anise, cinnamon, scallion, ginger and garlic. Then add the dried pepper and fragrant leaves. Stir in the streaky pork and stir well. Pour in the soy sauce and coat evenly.
Step4:Pour in the boiled water but not the streaky pork. Season with sugar and a little salt. Bring to a boil, cover and turn down the heat. Simmer for about 1 hour until the meat is soft.
Step5:Turn the heat to collect the juice. Stir fry the fresh red pepper and garlic until they are broken.
