On Dragon Boat Festival, we need to eat the traditional food mung bean cake. In order to eat healthy mung bean cake, I tried it by myself. It tastes good. It's better than the one on the market. This is pure mung bean cake. Let's get used to the taste of real mung bean cake~
Step1:Soak the peeled mungbean in water for one night. Change water several times.
Step2:Clean the pickled mung beans. Put gauze on the steamer. Pour in the pickled mung beans and spread them out. Bring to a boil over high heat. Steam over medium heat for 50-60 minutes.
Step3:Steam the mung beans and prepare the auxiliary materials. 80g white sugar, 60g maltose, 45g butter and 45g corn oil, 5g tea powder.
Step4:Steam the green beans and pour them into a container. Crush them. Add a little water and beat them into a paste with a cooking machine. (you can't add more water. You can move it. It's hard to fry if you have more water.).
Step5:This is the green bean paste made by the cooking machine.
Step6:Non stick pot to heat. Medium and low heat all the way. Pour in butter and corn oil.
Step7:When the butter melts, pour in the crushed mung bean puree. Stir constantly to let the mung bean paste absorb the oil fully.
Step8:When the mung bean paste is slightly dry, pour in white sugar and maltose. Continue to stir.
Step9:Until mung bean dough is formed.
Step10:The dough is divided into two parts.
Step11:Add the Matcha powder and mix well.
Step12:The color of Matcha should be kneaded evenly. The green bean dough with two colors is ready.
Step13:Divide the mung bean into small dosage forms about 18G in size
Step14:Flatten the small dosage. Put about 8g of bean paste filling.
Step15:It's wrapped like a bun.
Step16:Place the cap down.
Step17:Put a little oil on the mold and press it into a beautiful pattern.

Cooking tips:The key to making mung bean cake is to control the dry humidity of the bean paste. When it's dry, add some water. When it's wet, stir fry it again.
