Every summer when I go back to the countryside, my mother will buy some wild eels. I cook them. They are really delicious.
Step1:After the eel is decapitated, wash the inner abdomen with running water, put on a flower knife, and cut into three to five centimeter segments.
Step2:Boil the pot with water. Scald the eel section to remove the slime. Remove and rinse with water.
Step3:Put the oil in the hot pot. First put in the ginger and garlic, fry them to taste, then pour in the eel and stir fry them. Add in the rice wine, pepper and soy sauce, add a little water, and boil them. Because there are many wild bacteria in eels, it must be boiled for a while.
Step4:Season with salt before starting the pot. Half a spoon of white sugar to freshen. Stir fry in green pepper slices and serve. Open to eat.
