There are net red peach mountain skin moon cakes, Cantonese lotus egg yolk moon cakes and ice skin moon cakes. But I love the classic Soviet five kernel moon cakes best. Soviet style moon cake is a traditional food for the Mid Autumn Festival of the Han nationality in China. It is more loved by the Han people in the south of the Yangtze River. It has a crisp skin, beautiful color, fat but not greasy fillings, and a crisp taste. Until the appearance of Daoxiang village in the 38th year of Qianlong in the Qing Dynasty, this skill began to be collected, sorted, improved, innovated and spread. This year, I chose cooked lard for the shortening of Soviet style moon cakes. Cooked lard is the best one among the shortening. The cooked lard cooked by myself is also more reliable to eat. The choice of five kernel stuffing is basically made in my family. Walnut, white sesame and peanuts are all planted by my mother-in-law.
Step1:Crisp five kernel moon cake.
Step2:Prepare ingredients for moon cake skin - 300g medium gluten powder, 240g low gluten powder, 10g white sugar, 170g lard and 140ml wate
Step3:Add 50g lard, 10g sugar, 140ml clear water and oil noodles.
Step4:240g of low gluten powder, 120g of lard, and pastry.
Step5:Let the two kinds of dough stand for 20 minutes.
Step6:30 grams of water and oil noodles, 20 grams of pastry noodles and a layer of preservative film.
Step7:Prepare five kinds of nuts.
Step8:Bake in the oven at 120 ℃ for 20 minutes.
Step9:Put the roasted five nuts into the blender and beat them into small grains.
Step10:100g glutinous rice flour and 100g flour. Bake in the oven at 120 ℃ for 10 minutes.
Step11:Mix all the five kernel fillings together.
Step12:Each dose is 35 grams.
Step13:Take the water and oil skin and wrap it with pastry.
Step14:First roll it into a tongue.
Step15:Roll up. Press flat.
