Step1:Freeze the internal fat tofu a little (avoid water) and cut into small cubes and put them at the bottom of the bowl.
Step2:Add the same amount of cold boiled water and a little salt to the egg liquid. Mix well. Filter into the tofu with a strainer.
Step3:After boiling the water in the pot, put in the tofu. Put a lid on the bowl with tin foil or plate. Steam for 8 minutes first.
Step4:Use cooking wine + salt + dry starch to scratch the shrimps. Pinch to remove the fishiness. Then put the seasoned shrimp on the surface of the slightly solidified egg tofu.
Step5:Steam for another 8 minutes. Simmer for 5 minutes without opening the lid. Drizzle fish and soy sauce, sesame oil and sprinkle with shallot.
