Fried pork with fish sauce is a common dish of Chaoshan people. It's also a regular delicacy. Some of my friends are from Chaoshan, so I was lucky to have tasted such delicious dishes several times. So I learned how to make them when I came back.
Step1:Ginger washed, not peeled, slice

Step10:Add fish sauce and half of Shaoxing wine. Stir fry until fish sauce and Shaoxing wine are almost dry
Step11:Add brown sugar and the rest of Shaoxing wine, stir fry until the pork is drie
Step12:Add in the remaining ginger and stir fry. Do not thicke
Step13:It's delicious when you eat it with crisp ginger and pork

Cooking tips:1. Ginger is pickled with brown sugar. It absorbs the taste of brown sugar and turns into sugar ginger. After frying, the taste is crisp and sweet. 2. Material weight - 23 persons. There are skills in making delicious dishes.
