Step1:Cut the tenderloin into strips with thick fingers. Shred the ginger. Put in the egg white, pepper and cooking wine. Marinate the meat for 10 to 15 minutes.
Step2:Mix 1-1 flour and corn starch. Add a little bit of baking powder (it's easy to be crisp and foaming, but don't add too much). Add water and mix into batter.
Step3:Heat the oil in the pot and cook it for 5% heat. Wrap the marinated meat in the batter and fry it in the oil pan until golden brown. (I put it one by one. The meat strips can't be put together, or it will stick). Take out the fried meat strips. Heat the oil for 8% heat (start with large oil smoke). Put the meat strips together in the pot and fry them again. Fry until golden brown and crisp and fish out
Step4:Put tomato sauce or tomato sauce 60g. Sugar 60g. White vinegar 30g. A little salt into the bowl and mix well (I don't like sour ones very much. I don't put a lot of vinegar. Adjust according to my taste). Add some starch and water. Spare.
Step5:Hot oil in the pot. Pour in the mixed sugar and vinegar juice. Cook until there are a lot of bubbles. Then pour in the mixed water starch. Make it thick
Step6:Finally, put the fried meat into the pot. Stir fry the meat and the sweet and sour juice. Then you can get out of the pot
Cooking tips:I like sour food. I can add more vinegar. It must be white vinegar. Just a little bit of baking powder. If you add more, the fried batter is soft, not crisp. There are skills in making delicious dishes.
