Stewed chicken with mushroom is the first of the four stews in Northeast China. I think everyone is familiar with it. Chicken and mushroom are high protein and low fat food. Step1:Prepare all ingredients.
Step2:Cut off the root of the hazelnut mushroom. Wash it and soak it in water for more than 30 minutes.
Step3:Cut the chicken into pieces. Put 3 pieces of ginger slices and 20ml of yellow rice wine in the cold water pot (ginger and yellow rice wine are not in the list of ingredients. Calculate separately).
Step4:When the water is boiled, skim off the froth and take out the chicken pieces.
Step5:Heat the wok and put 7g of cooking oil (the amount of this oil is very small. In order to reduce the heat). Put in the onion, ginger and garlic and stir until it is yellowish and fragrant.
Step6:Put in the spices (this is all the spices. Let me show you a picture. Because of the fragrance of hazelnut mushroom, it doesn't need too much spices. Just a little to improve the flavor. Otherwise, it will rob the mushroom flavor
Step7:Then put in the chicken and stir fry
Step8:Add 7g of rock sugar
Step9:Add 30 grams of Huadiao wine. Stir fry for a while. Make the chicken slightly yellow. Stir fry the chicken oil. It's slightly brown.
Step10:Then add some soy sauce and seasoned soy sauce. Stir well. Stir for about 3 minutes. Let the meat color.
Step11:Make another pot while frying the chicken. Boil the water with hazelnut mushroom.
Step12:Add the boiled water of hazelnut mushroom to the chicken (the hot fried chicken can't be added with cold water. If the cold water is added, the chicken won't be easy to stew). If the water is not enough, add the boiling water to the pot. Submerge the chicken for 2cm.
Step13:Boil the water again and add in the hazelnut mushroom.
Step14:Cover the pot and simmer for half an hour. Then add some salt to taste.
Step15:Continue to simmer for about 1020 minutes (the maturity time of each kind of chicken is different. Master the time by yourself). After the chicken is mature, collect the juice in high heat.
Step16:It's ready to serve.
Cooking tips:The local chicken is better. You don't have to be strict with spices. If you don't add only one or two octagons. It's OK to add other rice wine or cooking wine or beer without Huadiao wine. If there is not enough water in the middle of the way, you can add boiled water properly. You can't add cold water.
