Step1:Cut the clean carp (cleaned) into two pieces. Put it in a fresh bag and refrigerate it overnight to drain the acid. Take it out before making. Cut tofu into 10 pieces.
Step2:Put the oil in the pot. Stir fry the onion, ginger, garlic and soybean paste. Add the raw soy sauce, old soy sauce, sugar, vinegar, salt and water to make it taste good. Add the cooking wine and carp to make it boil. Simmer for about 20 minutes (carefully turn the fish once in the middle and move the bottom of the fish to prevent sticking). Add the tofu and simmer for 10 minutes.
Step3:Put the fish together when you leave the pot. Put the tofu on the fish. Sprinkle some cilantro leaves to decorate it.
