Step1:Clean the cut fat head of the fish, especially the black film inside the belly of the fish. Make sure to scrape it clean. Pour a little salt into the palm of the hand, knead it, smear the inside and outside of the fish, sprinkle a little pepper, tap a little cooking wine, spread ginger and marinate for 10 minutes.

Step6:Steam for about 1012 minutes (the time can be adjusted according to the size of the fish). Turn off the fire. Steam for 12 minutes and start the pot. Sprinkle with chopped shallot and pour in boiling oil.
