Step1:Prepare material
Step2:Mix the flour with a little salt.
Step3:After the eggs are broken up, take about one third of the egg liquid, which is used for making pimples.
Step4:Pour the egg liquid into the flour one by one. At the same time, use the sharp chopsticks to quickly mix with the other hand until the flour in the bowl is mixed into even small particles (slightly larger than the rice).
Step5:Wash and remove the tomato. Cut into pieces.
Step6:Put the oil in the pot and heat it up. Pour in the tomato and add a little sugar. Stir fry until the tomato is paste and sand.
Step7:Pour in two bowls of water.
Step8:Boil over high heat. Turn to medium heat for about three minutes. Add a teaspoon of salt (5g) to make it taste good.
Step9:Put the dough in the pot with chopsticks. Stir it with spatula as you move it.
Step10:If you feel a little consistency in the pot, it's OK (you don't have to put all the pimples).
Step11:Keep boiling in the pot. Pour the egg liquid into the pot by turning from the edge to the center. Push it away with the spatula immediately after pouring.
Step12:Sprinkle some white pepper, some sesame oil, and then sprinkle some green onion.
Cooking tips:1. This method is simple and practical. It is very suitable for family operation. The point is - the egg liquid can't be poured into the flour all at once. Pour in a little bit. While pouring, use the sharp chopsticks to quickly mix. Do not stop mixing until the flour particles in the bowl are slightly larger than the rice particles. Drench the egg less and slowly. Otherwise, too fast will make the flour particles very large; the sharp chopsticks are easier to control and stir out the small flour particles than the thick chopsticks. 2. Put some salt in the flour. The dough pimples will be more elastic. It is easier to shape in the soup without dispersing. 3. It is easier to make pimples with egg liquid than with water. 4. When the tomatoes are stir fried in the pot, adding some sugar will make the tomatoes easier to sand and paste. 5. Control the consistency of pimple soup when it's in the pot. Keep it in a state that it won't be very thick when it's just out of the pot. Because after it's out of the pot for a while, it will become more thick than when it's just out of the pot
